Chicken and Lime Wings


  • 3 garlic cloves (peeled)
  • 1/2 medium onion (roughly chopped)
  • 1/2 cup cilantro (tightly packed)
  • 2 jalapeno peppers or 1 serrano pepper (ribs and seeds removed)
  • zest from 2 limes
  • 1/4 cup lime juice
  • Freshly ground pepper
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 4 limes (cut into wedges)
  • 1 - 2 tablespoons melted fat of choice
  • 6 pounds chicken wings and or drumsticks


  1. In a blender, mix the lime zest, lime juice, pepper, onions, garlic, ground pepper, cilantro, soy sauce and fish sauce together. Blend the all until a green puree is formed.
  2. Place the chicken in a large bowl and pour the mixture on it. Make sure that the sauce will cover he chicken well by mixing it with your hands.
  3. Using plastic wrap, cover the bowl and place in the refrigerator for 30 minutes (not more than 12 hours).
  4. Set the oven to 425 degrees, put the wings on the middle rack to cook for 30 minutes, flipping once after 15 minutes.
  5. Serve with lime wedges on the side.
