Stuffed Chicken Rolls


  • 1 6 ounce chicken breast
  • 1 slice Havarti cheese (or provolone if preferred)
  • 1 cup fresh baby spinach leaves
  • chicken broth
  • salt and pepper


  1. Preheat oven to 400 degrees.
  2. Pound out chicken breast using a meat mallet/tenderizer until approximately 1/4 inch thick.
  3. Top with a slice of cheese and spinach leaves.
  4. Roll up chicken and close with a toothpick. Season with salt and pepper or seasoning of choice. 
  5. Place in a casserole dish with a small layer of chicken broth covering the bottom of dish to help retain moisture.
  6. Bake until chicken is cooked through - approximately 25-30 minutes.
  7. Slice in half for two, 3 ounce servings.
